Master Chef Chan Kwok-keung is Head Chef and Consultant of a Michelin-starred restaurant and specialist in the cuisines of Beijing, Huaiyang, Sichuan and Cantonese cuisine. His expertise in these regions’ signature flavours has netted him local and international recognition as well as several awards. Ocean Park invites Mr. Chan to design a tantalising six-course contemporary Chinese-fusion tasting menu that delights diners with an exceptional culinary experience.

A Perfect Blend of Chinese Regional Cuisines

The menu blends concepts, essences and techniques of iconic regional cuisines across China – Sichuan, Lu, Cantonese and Huaiyang, presented in the style of elegant haute cuisine. This method of preserving traditional flavours and infusing them with innovative touches reveal the full character of each ingredient.

The course begins with a Four Colour Platter that offers traverses the scale of light to rich flavours, from the refreshing Crabmeat and Avocado Salad; to Pan Seared Scallop with Yakiniku Sauce, using Japanese seasonings to enhance the natural oceanic umami of scallops; then Hickory Smoked Duck Egg, incorporating the techniques of soft-boiling, marinating and smoking to create an egg with a gooey yolk and smoky aroma; followed by Sliced Spicy Abalone, featuring the prized shellfish in a Chef’s secret piquant Sichuan-style dressing.

The gourmet amalgamates the flavours of Beijing in the north, Huaiyang in the east and Sichuan in the west. Thai tiger prawns are first deep-fried in oil to seal in their juicy bounce, then stir-fried with finest Sichuanese Dou Ban Jiang chilli bean paste from Pixian plus aromatic Jiuniang sweet fermented rice from Suzhou.

It follows, featuring selected French morels and ‘Arisaema Tubes Fungus’ — Chinese Sarcodon mushrooms. Their earthy aromas bring out the flavours of slow-cooked broth double-boiled for over seven hours. Protein-rich peach gum, the natural sap of the peach tree, and bamboo pith, the delicate, lacy fungus that grows inside bamboo, are added for textural contrast.

These combinations of cool and warm, crispy and smooth textures write a perfect end to this culinary journey.
